Introducing Brazil Mio Ciasu: Our New Staple Coffee!

Some coffees impress you right away. Others grow on you with each sip, revealing layers of complexity. Brazil Mio Ciasu manages to do both.

This is a coffee with depth— Grown on the renowned Mió Farm in Monte Santo de Minas. It’s 100% peaberry, natural-processed, and carries rich notes of candied orange, maple syrup, and a juicy, rounded sweetness. We knew from the first roast that this one was special, and we’re excited to make it a staple offering.

The Farm: Where Tradition Meets Innovation

Mió Farm sits between the Cerrado and Atlantic Forest biomes, a landscape that provides ideal conditions for growing exceptional coffee. The farm spans nearly 2,000 hectares, with 400 dedicated to Arabica cultivation—including Catucaí, Bourbon, and Mundo Novo, the three varieties that make up Brazil Mio Ciasu.

At 1100 meters above sea level, these beans develop slowly, gaining the depth of flavor that makes this coffee stand out. Additionally, the low altitude makes these coffee beans less dense, more porous, and overall easier to grind and extract in most bean to cup machines! More on that here.

Why Peaberry?

Peaberries form when a coffee cherry produces a single round bean instead of the usual two. While they roast slightly differently—often more evenly—the real appeal is the unique selection process. Peaberries are sorted separately, allowing for a more consistent and refined final product.

The Process: Natural, for a Richer Flavour

Brazil Mio Ciasu is natural-processed, meaning the beans dry with the fruit still on, allowing them to absorb more of the coffee cherry’s natural sugars. This method is not only the most environmentally friendly—using little to no water—but also enhances the coffee’s fruit-forward characteristics while maintaining a smooth, clean sweetness.

In this cup, that translates to vibrant citrus, rich caramel-like sweetness, and a round, juicy body.

Tasting Notes: Candied Orange, Maple Syrup & Juicy Sweetness

The first sip brings out candied orange, a bright yet refined citrus note that lifts the cup. That’s followed by maple syrup, adding a deep, caramelized sweetness that rounds out the acidity. The texture is smooth and juicy, making each sip as enjoyable as the last.
