This is a Colombian decaf done properly. Selected from green samples cupped and approved to the same specialty standard as our regular offerings, this lot is specifically identified for decaffeination before export, meaning quality comes first, and the decaf process comes after.
Decaffeination happens in-country in Colombia using the Ethyl Acetate (E.A.) method. The green coffee is soaked in a bath of water and ethyl acetate — a solvent naturally derived from fermented sugars — which bonds to the salts of chlorogenic acid in the coffee, allowing caffeine to be drawn out without stripping the flavour. The coffee is then steamed at low pressure to remove any remaining traces of E.A., leaving a finished product with just 0.1–0.3% residual caffeine.
It's one of the gentler, more natural decaf processes available, and it shows in the cup. Where many decafs feel flat or hollow, this one retains real structure, mild citric brightness, a clean body and a warm brown sugar finish that makes it genuinely easy to drink. If you've ever written off decaf as a compromise, this is the one to try.

Tried Cannon after searching on maps for a local coffee roaster. First order was their Brazil Mio Peaberry medium dark and from first pull it was an obvious step up from other beans I'd been using recently (and they were not bad by any means). Will continue to work my way through their selection but imagine I will regularly return to the Peaberry.
